ISHIMARU Sanuki Mochi Barley Udon Noodles are Japanese dried udon made with domestically grown wheat and mochi barley flour. Combining traditional Sanuki udon-making techniques with the distinctive qualities of mochi barley, the noodles offer a pleasantly firm texture while providing 5.0 g of dietary fiber per 100 g dried serving.
The product contains barley-derived beta-glucan, a functional ingredient reported to help moderate the rise in blood glucose levels after meals. Recognised for both quality and its contribution to regional agriculture, Sanuki Mochi Barley Udon received the Minister of Agriculture, Forestry and Fisheries Award in the Domestic Agricultural and Forestry Product Utilization Category at the 38th Excellent Local Food Central Competition, following its Grand Prize at the 2025 Kagawa Prefecture Local Product Competition.
 
Product Use
Boiling Time: Approximately 5 Minutes
1.    Prepare your preferred dipping sauce, soup, and toppings before cooking. 
2.    For one 200 g pack, bring at least 2 liters of water to a full boil in a large pot. 
3.    Gradually add the noodles while gently separating them. 
4.    Loosen the noodles with chopsticks and boil for approximately 5 minutes, or until your preferred firmness is reached. 
5.    Do not add additional water while boiling. Adjust the heat as necessary to prevent overflowing. 
6.    Drain the noodles immediately after cooking. 
7.    Rinse under cold running water 2-3 times, gently rubbing the noodles to remove excess surface starch. 
8.    Drain thoroughly and serve with your preferred dipping sauce, broth, or toppings.
